Here are some last minute recipes to add to your repertoire courtesy of SBB Gourmet Catering (via Santa Barbara Wedding).The almonds and bark are also very easy-- and beautiful-- for dessert tables or gifts. Planning a party? The smoked salmon gaufrettes are a perfect for New Years.
Rosemary Marconna Almonds
- 5 lbs blanched marconna almonds {you can find them at Trader Joes}
- Olive oil
- 6-8 sprigs fresh rosemary {stems discarded}
- Coarse sea salt
1. Preheat the oven to 350F
2. In a large bowl, toss almonds in olive oil until well coated.
3. Sprinkle with sea salt and rosemary
4. Spread evenly on baking pans, and bake for about 10 minutes, or until light golden brown in color.
Festive Chocolate Bark
- 2 cups chocolate {chips or pieces doesn’t matter}
- ⅓ cup pistachios
- ⅓ cup dried cranberries
- ½ teaspoon coarse sea salt
{you could use any combination of fruit and nuts you like but the cranberries and pistachios are a yummy combo}
1. Melt chocolate in a double boiler or a microwave
2. Pour chocolate into a parchment paper lined 8×8 pyrex baking dish
4. Sprinkle pistachios and cranberries over chocolate
5. Using a spatula, spread the mixture evenly back and forth to an even thickness
6. Sprinkle salt over bark
7. Allow to sit out until set, 1-2 hours
8. Break into chunks and enjoy {or share if you can}
remember this is not rocket science no need to be precise with your measurements just have fun!
Smoked Salmon Gaufrettes
Note: we make our own waffle potato crisps but to make this recipe an even easier addition to you holiday celebrations there are plenty of quality store bought options available
- 2 dozen waffle potato crisps
- 2oz smoked salmon
- 6-8 sprigs fresh dill, chopped
- 1/4 Cup crème fraiche in a piping bag {or ziploc with the corner snipped off}
- 24 1” pieces of chive (garnish)
1. dice salmon into nice small pieces
2. mix salmon with fresh chopped dill
3. top each potato crisp with 2 tsp of salmon mixture
4. pipe a dollop of crème fraiche onto each and top with chive. For a luxurious splurge you could also add a little caviar on top.
