"What would you write on a very formal wedding invitation where the groom's mother has passed away but wanted her mention on the invitaiton."
Any ideas?

How about wording the invitation from you and your fiancé, not your parents. For example: Michael Michaels, son of Mary Michaels and the late Charles Michaels, and Diana Smith,daughter of Mr. and Mrs. Alexander Smith, request the honor of your presence...
Another option is to include mention of a deceased parent on your wedding program, like a poem, a special picture or a small tribute. Good luck!

I would put ".. the son of Mr. John Doe and the late Mrs. Jane Doe."

If the bride's parents are hosting and a traditional invitation is desired, the appropriate wording is:
Mr. and Mrs. Patrick Smith
request the honour of your presence
at the marriage of their daughter
Diana Elizabeth
to
Mr. John David Whipple
son of Mr. Matthew Whipple and the late Evelyn Whipple
